As warm weather approaching, need to make a room for summer vegetables, right now garden is full of all kind spring greens. Beets, garlic, onions,spinach, mustards,radishes and lots of lettuce, not to mention some cabbage and cauliflower growing form kitchen waste.
Mainly trying to use up the romaine lettuce, looking for a way to eat it 🙂
You can use many ways.
I make lettuce soup. It’s very refreshing in summer time, use a lot in Mexican food we love 🙂 and of course in good old American sandwiches 🙂
Thinking to find a way to use romaine lettuce, since I like sautéed cabbage, decide to make sautéed romaine lettuce.
Surprisingly tasted delicious 🙂
So quick and so easy
Ingredients🍃
One romaine lettuce, fresh from garden, wash , clean and separated all leaves.
One clove clove of garlic crushed. I used green garlic leaves instead since I am trying to use some greens 🙂 tastes as good.
Tablespoon of olive oil
Salt to taste
Red chili powder to your taste or just pinch of it🌶
Fresh lemon one small piece🍋
Tablespoon full of honey🍯
Let sauté romaine🍃
On a medium heat, place sauce pan
Add olive oil
Once it’s moving around in pan
Add crushed garlic
Sauté just for a second
Add lettuce leaves
Add salt to taste
Add red chili powder to your taste
Flip one time
Let it sauté both side
It cooks in a minute, that’s a best part you don’t have to wait to long to eat it 🙂
Serve it hot
Drizzle spoonful honey over it
Squeeze fresh lemon on top
Enjoy this hot and delicious sautéed romaine while it’s hot.

Tips and tricks on how to make peppers flakes 🌶

Peppers flakes from garden to kitchen table.

Pepper flakes made from organically grown peppers this summer in garden. It includes verity of peppers🌶.

Cayennes, habanero, Thai hot peppers, Tabasco, Anaheim and banana peppers.

All peppers sun dried few at a time as it ripped. You can use dehydrator or dry in oven using low temperature , however I prefer sun drying method to dry most my vegetables except herbs like tulsi and peppermint I dry I cool shaded place.

I also dry my turmerics in sun to make turmeric powder.

Once all peppers fully dried, it’s very easy to make pepper flakes or powder.I used my good old food processor to make flakes, some people dry their peppers in oven and crushed by hands, I avoided both by not oven drying and crushing by hand, it’s too risky to use hands , this peppers are extremely hot , you don’t want to take any risk by touching them . It’s way too hot, even you don’t use hand , you still want to use kitchen gloves all the time until you finish whole process and clean all utensils you used including kitchen counter top to be safe than sorry 🙂

It’s unique sweet with full nd easy to make.

Let’s make sesame seeds brittle .

It’s very water, quick and need only seeds of ingredients.

Ingredients:

Two cups sesame.

Two cup sugar.

Half a cup

Prepare:

Grease dish with butter or oil, keep it aside.

Slightly roast sesame seeds on medium heat, keep it aside.

Let’s make brittles:

On a medium heat, place sauce pan.

Add a half cup water.

Break it into pieces.

Enjoy:)

Tips and tricks on how to freeze fresh turmeric 

In the kitchen🌶 Busy working in the kitchen since morning more it looks like a working in a turmeric processing factory 🙂 

Making fresh turmeric paste to freeze this morning while cooking my breakfast 🙂

It’s too much turmeric to dry so decide to grind half of it to paste and freeze in a ziplock bags. Filled up four bags with turmeric paste, that speed up the process of taking care of half the turmeric I harvested this season and half of it just shredded in food processor and left it outside to dry, feel accomplished 🙂

While working in the kitchen, also made my breakfast 🙂

Sautéed one zucchini with 

One green pepper

Couple of cloves of garlic 

Added 

Olive oil 

Salt

Red chili powder 

One tablespoon of hot salsa

It cooks so fast in a minute 

So delicious 🙂

I like this kind of breakfast, it takes so little time, effort and just couple of ingredients, specially when you busy doing other things, yes I also finished my breakfast while working with turmeric 🙂

Now cleaning the kitchen is another story 🙂

Tips on how to make turmeric powders from garden fresh turmeric🌱 

My favorite time of the year autumn🍁time to harvest, season to celebrate to appreciate and show our gratitude towards nature.🍃
Turmeric is always a last thing to harvest in the garden. It takes almost month of November from start to finish.
I already harvested some earlier and made pickles.

I harvested  some more to dry and make powder to use in every day cooking.

How to dry turmeric:

First , need to wash good few times , peeled the skins, wash one more time to make sure no dirt remain in it.

After washing and peeling, towel dry so no water remains 

Some people boils the turmeric, than sun dries, I don’t like to boil, it’s not necessary as it will loose some nutrition from the turmeric roots, plus it will boil and cook when you use in cooking, 

So no need to boil or cook twice, doesn’t make sense in my opinion.

Ok now slice all the turmeric, small pieces is better so will dry faster.

Spread all the turmeric in trays with clothes or paper towels in sunny spots 

I dried mine in my front porch 

Turn it upside down everyday, until it dries completely.

In summertime , or after summer depending on your climate,turmeric  should be completely dried  and ready to process to make powder.

It took three days to dry completely, thanks to Georgia weather, extremely hot here in south.

How to make turmeric powder
You can make powder two ways

Using coffee grinder

Using blender

 1 : using coffee grinder

coffee grinder is easiest way to make power

it works perfectly grinds so quickly, try few at a time.

if you want fine powder, use sifter couple of times

Your turmeric power should be ready to use.

2 : how to make turmeric power using blender

You can also use blender, in that recipe

You wash, clean and towel dry turmeric, make small pieces and grind few at a time at a time

that will give tiny pieces of turmerics, which you put it out in sun to dry again

When that dries,

you grind again that should give you powder like consistency, leave it out on counter, in case any moisture remains in it

Next day or whenever you have time, you grind one more time,you will get your turmeric power ready to sieve to get fine power of turmeric.

You have your home made turmeric powder ready to use in cooking, smoothies, tea,turmeric milk or just add in your favorite juice.

Nothing like garden fresh dried turmeric. 🌱

Whole kitchen is full of pure turmeric smell, color also very vibrant than commercial store bought package turmeric powder,.

since it’s pure and highly concentrated in flavor and nutrition you only need pinch or two in cooking.🌱

Garlic pickle🌶

image.jpegimageHi friends as we all know garlic is good for you. It has many health benefits.you can use garlic in every day cooking like soups, sauces and garlic bread, or you can make garlic chutney and garlic pickle.
I like to make fresh garlic chutney to eat with breads, rice, vegetables and dal or soups.
I already posted a recipe for garlic chutney you must check it out you will be glad you did , that’s my favorite chutney.
Today I am going to make garlic pickle. This pickle you can keep it in a refrigerator for few months .
Let’s make garlic pickle.
Ingredients.
About two cups garlic peeled and sliced.
Two fresh lemons.
Half cup oil.
One tablespoon salt.
Half cup Jeggary.
Half cap red chili powder.
Two tablespoons crushed mustard seeds.
Two tablespoons crushed fenugreek seeds.
Two tablespoons coriander seed powder.
One tsp mustard seeds.
One tsp cumin seeds.
Half tsp hing. Asafetida.
You can also add pickle masala if you have .
One tsp turmeric powder.
Keep saucepan on a medium heat
Add oil. Once oil gets hot
Add mustard seeds and cumin seeds
Add hing. Right after
Add turmeric powder
Add crushed fenugreek and crushed mustard seed powder. Keep stirring.
Add coriander powder. Mix.
Now add Jeggary. Once Jeggary starts melting
Add red chili powder and salt. Mix it. Keep stirring
Now add lemon juice. and sliced garlic.
Mix it well.
Garlic pickle is ready.

Turn off the heat.
Let the garlic pickle cool down completely then store it in a jar. Keep it in a refrigerator. Enjoy this garlic pickle for few months with your favorite food.

Instant lemon peel pickle🍋

It’s hot here in the south,  made lemon sherbet.

I used three lemons to make sherbet so I had three lemons peels.

instead of throwing it away in compost, I decide to make instant lemon peel pickle.

no need to throw away perfectly good food. Lemon peel probably have more vitamin c  than actual lemon juice.

lemon peel pickle you can make instantly and also can eat instantly:)

very easy to make in a minutes and tastes delicious.

lets start making lemon peel pickle

in a cooking pan or sauce pan on a medium heat.

add about cup of water

add pieces of peels you prepared, make sure take out the seeds.

add about half a cup sugar  or more or less according to your taste

keep stirring while you add other spices.

add salt about one and a half tsp or to your taste

add red chili powder two tsp🌶.

add pinch of hing , asafetida powder.

add one tsp coriander and cumin powder

Add one tsp mustard seeds crushed

add fenugreek seeds one tsp crushed

add one tsp coriander seeds crushed

keep stirring while mixing all the spices

in a minute or two all the spices will incorporates, lemon peels will get soften and sugar water turns in to thick syrup.

turn off the heat once the pickle gets to right consistently,

lemon peel pickle is ready to enjoy🍋.

this lemon peel pickle you can eat right away, I fact you want to eat couple of pieces while it hot, I love it 🙂

Note:

as you can see I didn’t boil lemon peel ahead Or I didn’t make any oil tampering .

to me both the steps unnecessary, no need to boil twice, you loose all the nutrients from the lemon peels.

If you don’t have all the spices

Salt, sugar and red chili powder is just fine to make and eat quick pickle 🙂

I also add Jeggary instead of sugar sometimes for healthy sweetness

Sweet and Spicy cereal snacks

imageThis cereal snack so easy, quick and tasty for anytime sacks. It can be made with any available cereal you have in kitchen. Any leftover or new box of cereal you can use to make this tasty cereal snacks. Cereal like corn flakes, Honey Nut Cheerios and rice crispy. You can also add poha and mamra available in Indian grocery store. You can any cereal more or less.
Main important thing is you have to prepare all the cereal you want to use, spices, nuts and fruits you want to use ahead than you start cooking.

Ingredients.
Cornflakes, Honey Nut Cheerios, rice crispy or any other . Mix in large bowl keep it ready.
Nuts: Cashews, peanuts, pecans or any nuts you like.
Sesame seeds if you have.
Raisins
Shredded coconut
Salt
Sugar
Turmeric powder
Red chili powder
Oil for tampering
Mustard seeds, fennel seeds and coriander seeds
Curry leaves couple of green peppers thinly sliced
NOTE: if you don’t have couple of things you still can make this snacks with out it.

Let’s start cooking.
On a medium heat, Ina large saucepan add oil. Once start heating and moving around in pan
Add mustard seeds, fennel seeds and coriander seeds. Add curry leaves and green peppers.
Add sesame seeds and the nuts.
Keep stirring while you adding
After nuts you add raisins
Add turmeric powder
Add half the salt and half the red chili powder.
Keep stirring and start adding cereals
Keep heat very low and add remaining salt , sugar,shredded coconuts,and red chili powder according to your taste. You can taste at this point and see if you need to add any salt, sugar or red chili powder. Mix it well until all cereals, nuts, fruits, seeds and spices incorporate to desire taste.
NOTE: use all the nuts, fruits, seeds and spices according the amount of cereal you going to use. Just add whatever you like and what ever you have in kitchen available at a time.

Once it done turn off heat and switch pan to aside to cool down. After few minutes it will turn in to sweet, salty and spicy much crisper cereal snacks. It tastes so good you can’t stop eating.

Ginger pepper pickle

using a fresh ginger and fresh jalapeño peppers

wash, cut and slice

adding

salt to taste and

fresh lemon juice🍋

Tastes delicious after couple of days, enhance the flavor of any food , you eat with rice, beans, breads.

Garlic chutney

If you like hot and spicy food like me, you will love this garlic chutney.
You can make this chutney many ways and using different ingredients but this chutney is so simple, easy and need only few basic ingredients.

Ingredients:
7 to 8 cloves of peeled garlic.
1/2 cup of red chili powder.
1 tsp cumin powder.
1/2 tsp salt or according to taste
Small piece of jaggery.
Couple of spoons water.

You can make this chutney in a small mixers but I like to use a rolling pin and board so let’s make a garlic chutney.
On a rolling board:
Place peeled and chopped or crushed garlic
Add red chili powder
Roll it until garlic and chill powder mixed well
Add cumin powder, salt and jaggery
Roll it until it makes thick paste
Add water slowly and roll it few times
Mix it well your garlic chutney is ready to enjoy with your favorite bread, roti, nan or paratha.

Ti make it more exotic tasting, I add tempering by adding 

Mustard seeds in hot oil, 

Once seeds splatters, add pinch of hing and pour it in the chutney 

Mix it well

Tastes delicious 🙂
