Coconut cookies can be made with dry coconut or fresh coconut. It’s easy to make with just few ingredients. This time I make coconut cookies using fresh coconut since I already have one in kitchen.
One cup coconut ground or shredded.
One cup sugar.
One cup all purpose flour.
Half cup butter.
Half cup milk.
Let’s start cooking
First cook coconut in milk for few minutes until all milk incorporate with coconut and become thick paste, keep it side and let it cool completely.
In a bowl mix sugar and butter very well.
Add flour in to sugar and butter.
Add coconut mixture .
Mix well, make as soft dough, shape it in round log by rolling on rolling board.
Sprinkle sugar on the board, roll the dough so sugar will stick to dough.
Cover the dough with foil or plastic wrap.
Keep the dough in refrigerator for at least one hour.
Preheat the oven for 350.
Take the dough out, cut it in circles. Place it in a baking sheet, shape it with hand or fork by press it on cookies.
Bake the cookies for 30 minutes.
Take the cookies out .
Turn off the heat.
Let the cookies cool down completely
These coconut cookies will be crunchy from outside and slightly soft, flaky from inside and heavenly delicious. Enjoy.
